Pickled Hot Pepper Rings

Preparations for canning them takes more time and effort than the actual canning does.

Cleaning and slicing the peppers releases the same chemicals one would find in pepper spray... just not as concentrated.  Working with a fan blowing across the sink and counter helps but you'll still be coughing, sneezing, and blowing your nose before you got to the end.
But they're worth it.  
I can't truly describe the cold, crispy, sweet, spicy sensation when you bite into them on a hot slice of pizza. Incredible!
