Damp, dark and humid

Today I am supposed to be designing and making pastries. They have been three weeks in development and I've been wildly out of my comfort zone.

I have learned many things in the process, including: trying to do any sugar work on a warm and humid day is impossible. Tempering chocolate is not that easy either. So it will have to wait!
