Caramel Passionfruit cheesecake

Paul’s choice for a Father’s Day treat and we can all confirm it was delicious!!

It features Passionfruit caramel and dark rum in the cheesecake and I used caramel digestives for the base, I then topped it with more Passionfruit caramel, mainly to stop myself eating it all!!
