Fusilli alle melanzane

This recipe has all the usual suspects of garlic, olive oil, tomatoes, salt, pepper, a pinch of sugar and basil leaves and aubergine.
But it also has, unusually, a large pinch of bicarbonate of soda which seems to lighten the sauce somewhat.
