Mmmmm lemon pie....

Behold my first attempt at a pie. This is a Tasmanian Lemon Pie, from Tamasin Day Lewis' cookbook no less. But where did she first eat it? County Mayo! :-) Which was not in Tasmania the last time I looked, but that's not her fault.

You'll have imagine this slice of lemon to be warm, with a nice a cup of tea close to hand. It is sponge at the top with warm oozy lemony custardy stuff at the bottom.

I'll save the rest for laters. :-)
