Butternut squash soup.
With feta and mint soda bread.
Today’s lunch and this week’s homemade soup.
I added some zaatar to the soup as it was a bit bland.
I used the seeds from the squash and roasted them in the air fryer with some zaatar and a spay of oil. They were quite nice on their own but I wouldn’t bother adding them to the soup as they they were a bit too crunchy.
I didn’t bother making the lentil cake.
