Duck Day

When I was working in Milton Keynes a number of years ago, I sometimes used to stay in a hotel which belonged to a French chain. Confit of duck was always on the menu and it was often my choice as it was so delicious. Later, I found a recipe I liked and now whenever duck legs are on offer in the supermarket, I make a small batch for the freezer. As well as these, today we also had a breast of duck for our Sunday meal.
