Beet Salad with goat Cheese, Mache and Pistachios
After yesterday's blip decided I needed a vegetarian option for today...This is how I used the beets I bought at the Farmer's Market Saturday morning. A local restaurant has a similar salad on the menu that I am compelled to order every time we go...So I thought I would try to recreate. This recipe is from epicurious.com. It is not quite the same as what the restaurant serves but looked close. I omitted the pistachio oil and instead used olive oil in the dressing. (1. could not find pistachio oil in grocery store and 2. wasn't sure I would use for anything else so wasn't sure I would buy if I actually found).
