Grantham Gingerbreads
Gingerbreads come in all colours and textures. The Grasmere gingerbread is dark and firm whereas my wife's family recipe is dark, soft and spongy. Grantham gingerbreads are again different as they are light in colour, crispy on the outside, chewy inside and hollow. They are very quick and easy to make and make a change from the darker varieties. These I made this morning while my coffee was brewing.
