Pancake Day

After a LONG and noisy day at work (faulty fire alarms are the bane of my life at the moment at home and now work too!), I quite happily tucked into a packet of pre-cooked Tesco pancakes with D instead of making them. I reflected even more this year on the many happy years of pancakes flipped by Mom with raisins, lemon juice and maple syrup, usually on Ash Wednesday because she’d be very busy hosting her church family on a Tuesday! I don’t half miss her!
