chipotle

In to see Pep the butcher this morning.
At the rate they are going the meat counter will soon be hidden by the baskets of home grown veggies, home made pastas, smoked delicacies, cheeses and now an increasing range of spices and condiments .

Chipotles, from the Nahuatl word chilpoctli, are smoked chillis, in particular smoke dried jalapenos.
Made from the fruit that remain on the bushes at the end of the growing season and are by then deep red and quite dry, they are further dried and then smoked.
Pep reckons they are a great ingredient and I'm just waiting to see what little specialty appears with a chipotle twist in his occasional series of 'ready for the oven' dishes.

I have to admit to being very taken with the container! and the Pimento one too.
