Not just for Christmas…
I had some leftover mincemeat and it seemed a bit odd to make mince pies, so it was out with the Mary Berry book…
I made these in 1lb loaf tins- one for now and one in the freezer. I thought I had some blanched almonds in the cupboard, but didn’t ( I also had to substitute dried cranberries in as I was a bit short of the other dried fruit- it’s a very forgiving cake!).
