A taste of summer
The Elderflowers are ready to pick this week so I am making cordial everyday. It is such a delicious drink for the summer- we are still drinking some from last year as it keeps so well.
My recipe is from a dear friend who used to live in Guernsey
Recipe for those who would like it:
20-25 Elderflower heads - depending on size
35 fluid ounces of water
4lbs sugar
2 1\2 ozs ( two and a half ounces) citric acid - from chemist but you can buy it online
2 lemons-
Boil water and add sugar. Stir well until dissolved.
Turn off the heat and add the grated rind of two lemons and the sliced lemons
Push in the flower heads until submerged
Steep for 24 hours.
Strain the cordial through a jelly bag.
I find it easier to strain the liquid through a sieve first, then put the cordial through the jelly bag
Pour into clean screw top wine bottles or similar.
Dilute to drink and enjoy.
