Mince Pies
My mum used to throw her barely weighed pastry ingredients together, never chilled/rested it and produced delicious perfect results every time.
I’m not similarly blessed. I’m convinced that like a horse, pastry can ‘sense the fear’. I have a fab recipe and my Magimix does a splendid job but I’m not convinced that the rest of the process goes quite so well.
Anyway…now they’re baked, they look ok. At least this batch is an improvement on the ones I made a couple of weeks ago. They certainly smell delicious.
