Revenge of the rhubarb plants!

The West of Scotland is teaming with rhubarb at the moment - it's everywhere. We are lucky as this area of the world is great for plants like rhubarb and also soft fruits such as strawberries and raspberries. Rhubarb means summer to me.

When I was growing up all the rhubarb that grew was used - stewed; jammed and stuck in a crumble or two.

Now, for me, rhubarb means jam - and here it is. And it's the easiest thing in the world to make.
