Snowball Cookies
Last Sunday I posted a picture of the Snowball Cookie tea-towel.
Here are the finished cookies. Half of them I rolled in coconut before baking. The recipe is below:
½ cup (110g) powdered sugar
¼ tsp salt
1 cup (230g) butter
1 teaspoon vanilla extract
2 ¼ cups (315g) flour
½ cup chopped pecans
Additional powered sugar to dust
Desiccated Coconut to roll cookies in
Cream butter, sugar and vanilla until fully mixed.
Add flour with salt to creamed mixture, blend thoroughly
Add nuts and mix well.
Chill dough for 1 hour
Preheat oven to 400 degF (200 degC)
Shape 1 inch balls. Roll in coconut before baking (if taking this option)
Bake 8 – 10 minutes. Do not brown,
Cool then roll in powdered sugar
I did half in coconut, and dusted the other half in powered sugar after baking.
