Ribwort plantain
Blowing in the wind.
Mostly thought of as a weed, but its seed heads remain for most of the winter, providing food for finches, sparrows, etc. It's an antihistamine, antifungal, antioxidant, analgesic, and even a mild antibiotic. It's very effective at dealing with nettle stings or insect bites, unlike Dock, which is just a placebo. Tea made from the leaves is an effective cough medicine. Apparently, the flower heads taste surprisingly like mushrooms. I'm not sure how you would cook them, though!
