Dutch boats

Dutch steel boat, at home in the canals or at sea and a v. large catamaran, also popular, for shallow draft and massive accomodation, as well as not heeling over. My problems with them has been that when they do heel over so far, they go all the way and stay there. Having designated escape hatches when upside down is quite concerning. I am surveying a smaller version and it also has instructions on when to reef to avoid the tipping over. I'm not sold on the concept. I appreciate this will be gobbledegook to the non sailor, sorry.
