Pizza

Mortadella and pistachio pizza, and tomato salad with kohlrabi and turnip shoots. Wine: Domaine de Fontsainte Corbières 2020.

I succeeded this week in making the pizza I failed at last week. It was a matter of rejiggering the recipe's hydration ratio for this flour. Mortadella and pistachio seem like odd pizza toppings, but the result was great.
