Baking biscuits
We were expecting a visit from Mum's friends Joyce and Barbara from Sunderland today, so I baked two sorts of biscuits.
On the left you see the almond biscuits from the Bero cookery book. On the right are peanut cookies. I have no idea where the recipe for these came from. It is handwritten in my recipe book and we have made these for years.
We nearly always have to provide the recipe because they are delicious.
One person tried cooking them but said it took too long to remove the skins from the peanuts! (They are red skinned and the skins stay on.)
If anyone wants to try, here goes:
4oz butter or margarine (or mix half and half) creamed together with 4 oz caster sugar.
Add 4oz peanuts and 1 tablespoon of golden syrup (don't overdo the syrup or the cookies will spread a lot and burn easily)
Add 5oz self raising flour.
Mix together to make a soft dough.
Place small balls (about 1 teaspoon size) on a greased baking tray and cook for 15 minutes at 180 degrees (or 170 in a fan oven). Allow for spreading.
Leave on the tray to firm up for about 5 minutes before transferring to a cooking tray.
They should be cooked and golden brown when they are ready. I watch them like a hawk when they are nearly done.
