2023 Sunday — Mini-Cherry Pies
This is the finished product after pitting all the fresh cherries last night before bedtime (see yesterday’s blip). Today I used them in a recipe — Mini-Muffin a Cherry Pie.
I think the little pies were good. I think they could have been better if I had made the pastry dough from scratch, but I did not. I used the store bought package of pie dough. Next time I will definitely make my own. Also I confess that they are quite ugly little pies; getting the top dough on each one was not easy. I’m sure some practice would help.
The recipe called for two pounds (or about 5-6 cups) of pitted cherries. Also 1/2 cup sugar, two tablespoons of lemon juice, two teaspoons of cinnamon (optional), and two tablespoons of cornstarch (or substitute flour as a thickening agent).
This is the first time I have ever made cherry pie. I’m feeling quite accomplished— not.
