A New Way Of Life With A Vicky Sponge

I thought I'd try my hand at baking again after the disastrous espresso and walnut cake of a couple of weeks ago and settled on sticking with my previously tried and tested Victoria sponge. Luckily as you can see in today's image all was well this time!
However, I did decide to go down the 'controversial' route and have a pineapple and cream filling instead of the usual jam - a completely new way of life! :-)
Friday at last and my brother was so happy that he was no longer running to stand still (see yesterday's blip) and the weekend had finally arrived. After I picked him up from the station tonight we headed straight to The Red Bull in Eccles for a celebratory pint. It was pouring down with rain when we got there but we didn't care and we still sat, under cover, in the pub garden and toasted the forthcoming weekend.
It was then a quick dash to M&S on the way home to get a main course which we later followed with a large slice each of my Vicky sponge. Thankfully the pineapple iteration got the thumbs up! :-)
