Today's Tortillas
Due to the current financial crisis in my apartment, there has been a movement to a little something Jordan and I mastered in our school days in Waco. What you ask? Living out of the pantry. This is a skill that I am sure many of you have mastered in your own lives. It fosters creativity, frugality, simplicity and the use of your staples.
Don't feel bad for me, this financial crisis is not due to my selfless service to the church, nor is it a result of my sacrificial commitment to humanitarian aid. This crisis is due to poor personal administration combined with poor personal financial decisions. And there you go, nothing that deserves pity.
The irony is that in the midst of it I am trying to figure out what to do with all the gift certificates and birthday gifts from last month... Isn't life funny?
So today, when I was thinking about what I could make to have around that would be multi-useful, I decided tortillas and pumpkin bread. I am going to half the bread with the homeless kids downstairs, I have a new compassion for their diet, as well, I realize they don't have a pantry to cook from. Especially one that gets care packages from home. I am not sharing the tortillas. I am really good at making tortillas and they are delicious. I don't know much made out of flour and butter that isn't.
So there you go. I hope you are duly amused. Fear not, I will not starve, and I, like whales, retain a little extra on my body in case of shortage of food or cold weather! hahaha. Also, as you go to sleep at night please send your thoughts and prayers to the election in Lebanon. This is a crucial election and the accomplishment of it in peace would be a huge statement.
Happy Saturday everyone.
And yes to my Texas and Beaumont peeps, that is Tex Joy in the background. It's a staple in my butter tortillas!!!!
