Lemon Drizzle Cake
As a contribution to the weekend festivities I offered to make a cake, so chose lemon drizzle, because everybody loves lemon drizzle, don't they?
I used Mary Berry's recipe, taken from a search on the web, as she uses a 2lb tin, which means a bigger cake! Except this tin is a little smaller, so I have a nice domed top.
What I had not foreseen is that the syrup would drip down the outside of the liner and pool in the bottom of the tin, which made a bit of a mess when turning it out but, not to be outdone, I put as much as possible back on the cake and put it in the oven on very cool fan for half an hour or so to dry it off and popped the remainder in a little tub to pour on each slice.
We're celebrating the Coronation in Englandshire with my eldest brother as he would otherwise be alone, so we're looking forward to sharing the street party.
