Pat’s version of Simnel Cake

A trip to Edinburgh to have lunch at the House of the Dog family.

Ann is slowly recovering from her knee surgery and all appears well.

Pat contributed the Simnel Cake and divided the recipe into four little cakes.

It is very rich and it is gluten free. Pat made the decorations out of Marzipan. One cake was eaten on the day and we took one home for ourselves leaving the other portions  for The Dog Family.
