Chocolate Avocado Mousse.

We got three very ripe avocados in our CSA box Monday, so I had to figure out how to use them all in pretty short order. This, of course, is a great problem to have. The final one went into tonight's dessert. This was definitely the most unusual use of an avocado (from a Gordon Ramsay recipe), but it was delicious. It was also dead simple to make: throw avocado, cocoa powder (I used a good dutch processed one), and honey in a food processor, blitz it until combined, then portion and leave in the fridge at least an hour before serving.
