Twice baked potatoes
A delicious dish when you've got no time but a hearty appetite! This recipe is from HFW's River Veg Everyday and it's super easy.
Just bung on some baking potatoes for an hour at 200C. Then scoop out the flesh and put the skins back in the oven for 10 mins. While the skins are cooking, mix together the potato flesh with some butter, sour cream, spring onions & cheese, and season to your liking. Then put the mix back into the potato skins and bake for another 15 minutes.
