The remarkable lemon sole

As well as having a fine, delicate flavour, the lemon sole represents an amazing feat of evolution.

A mere 2.9 million years ago this fellow's ancestors were regular round fish. 

Finding better food on the sea bed but finding itself blind sided by sediment it gradually evolved. Now both eyes are on one side of the head allowing a full view of potential predators.
