2969. Enchilada Lasagne

I made a new recipe today from Pinch of Nom…it was Enchilada Lasagne and it was delicious!

It was made with wraps instead of sheets of lasagne and a wonderfully spicy beef with peppers, courgette, sweetcorn, onion, kidney beans and a bit of cheese!

I made two lots so we can have the other one later in the week.

A quiet day today doing not much apart from housework.  My neighbour signed my photo for my passport application….not sure if I needed her to though as I’m attending in person next week to renew my passport.
