Not Mac, not cheese
Finally got around to making my version of nearly vegan ‘Mac and cheese’ using some non macaroni pasta and using B12 yeast flakes to reproduce a tangy mature cheese taste. I used onions, flour, butter (not vegan!) seasoning, almond milk, paprika, garlic and chilli crunch on the top. It was a delight. I’ll make it again! Heated up the next day it was super tasty. I suspect the fully vegan version is very good and the fully dairy version could be equally fab.
I was a bit sceptical how it would taste so had cheese on standby to top it up if needed (I’m not vegan) but it really wasn’t needed. I’m guessing this is relatively low fat. I love finding simple, quick to cook things like this.
