Winter vegetables
Another one of my wife's creations. It's a sheet of puff pastry again, this time baked in a round dish with a lip. Around the edge you sprinkle cooked winter vegetable cubes with some feta cheese cubes and seasoning. You then cut from the centre to the ring and fold the puff pastry back to create the star pattern, and then bake. It's a quick way of making a simple vegetable dish that you can easily cut and serve and it mostly holds together on its own so it's quite practical.
The original had twice as much feta cheese and no onion, but my wife added some onion to the mix and reduced the cheese ratio, and the result is both cheaper and probably healthier too. We had it my mother-in-law's today.
