Rainy rainy rainy. After the beautiful weather over the last three days, the cloud bubbled up from nowhere and by the time I was leaving work it was pouring. I don't know what it is that makes that lovely smell of summer rain - maybe the drops hitting warm, dry earth rather than already wet ground - but it was almost a joy to walk home in, hidden under my huge umbrella. When I got home, M was waiting on the sofa, with a glass of tonic and ice for me. I made us a dinner of baked tortillas - it's not proper cooking; more just putting ready-made things together, but so I don't forget...:
1) Fry off a large onion and two chunks of garlic in half a tbsp oil. When soft, add lots of spinach (500-700g). Fry until wilted. Season generously with salt, pepper and a little nutmeg.
2) Add in a tub (250g) of light marscapone (tastes the same as full-fat but without the guilt) and warm through.
3) Pour the mix into a food processor and whizz to a satisfyingly green-marbled sauce.
4) Take four low-fat tortilla wraps and lay them out. Blob the cheese/spinach mix in the centre. It's quite wet, so you'll need to have a baking dish handy!
5) Roll the tortillas, with sauce inside, like a fajita and place side-by-side into a baking dish.
6) Pour a jar of ready-made tomato sauce (yes, I know this is super-super-lazy, but Asda's Extra-Special Bolognaise sauce is rather amazing) over the rolled tortillas.
7) Sprinkle 65g fresh breadcrumbs on top.
8) Bake in the oven at 200 degrees for 15 minutes, or until the breadcrumbs are golden.
Serve with salad to two absolutely starving people, or 4 normal people.
It takes about 45 minutes to make (so easy after a full day of work) and is really healthy. Of course, it would have been better if I hadn't eaten two meringues with a cup of coffee afterwards!
We spent the rest of the evening watching Masterchef Australia, then had a revision session for our Norwegian course. Tomorrow's class has been cancelled but to be honest, that might be a good thing - we've not practiced as much as we should have, so we'll have to work a bit harder before next week.
