Turkey

Roast turkey, roasted carrots, scalloped potatoes with queijo do reino, and salad with requeijão vinaigrette.

I was commissioned to make turkey and accompaniments for Christmas "dinner" (actually lunch). I spatchcocked the turkey and put a butter and herbs under the skin. The potatoes and salad were improvised based on things that were on hand. All came out very well.
