Peanut Butter and Chocolate

I generally only make one cookie, an oatmeal raisin orange that is half-dipped in white chocolate. Without patting myself on the back, it really is quite good.

Lisa is our baker, but she asked me to throw this together today. It is peanut butter between two Ritz crackers, then dipped in chocolate. The only tricky part is not over melting the chocolate. Low and slow is the way to go.
