Chicken Bonne Femme my style
Third generation Italian version of a classic French dish…
Free Range chicken breast cooked with a red wine, onion, garlic,cream,and porcini/chestnut mushroom sauce.
Made this in various versions through my cheffing life, it was I suppose one of my signature dishes, though it would usually have been fillet steak not chicken, it goes without saying, no recipe is definite , in Italy as in France, cream would not be used, nor red wine but brandy/cognac or suchlike.
