Poor J

This man loves cheese and butter and all the things he can’t eat right now. He wanted potato soup and the challenge was to make it without butter, bacon, cheese or heavy cream!! Yikes! And surprisingly it was good! I started with chicken broth and added carrots, celery and onion to the potatoes. I seasoned with garlic, salt and pepper and thickened it a bit with a little flour. I puréed a portion of it to give it body. I did add a small amount of half and half at the end. It was tasty! I provided sour cream and cheese for those of us who could have it. We had friends over and lit the fire pit. It was a nice, peaceful evening. Friday was Matt’s birthday. There was much laughter in remembering him.
