Chicken Confit

Chicken confit, roasted turnips with veal demi glace glaze, carrot salad, and Camembert. Wine: François Crochet La Chene Marchand Sancerre 2019.

The confit is from D'Artagnan (perhaps I'll try to make my own some day, but it seems much cheaper to buy readymade on account of the volume of good fat required). I usually make the carrot salad with dijon mustard and vinegar or lemon juice, but tonight I made it with my own homemade mustard and pink grapefruit juice. It was very nice.
