Some Irish are prone to proclaim that “Guinness doesn’t travel well”.  The same might be said about pizza and Italy.  Pizza has a totally different level of excellence in Italy. A few well-matched toppings on a crisp thin base. Simple. Delicious. Served with gusto and pride. In 2017 Pizza was added to UNESCO’s 'Intangible cultural heritage of humanity' list [Source].

We enjoyed these pizzas amongst the locals in the Testaccio region of Roma.  The frantic cooks working the oven cheerfully tolerated the tourist with the cellphone camera in their busy midst.
