The Sun coverts about 600 million tons of hydrogen into 596 million tons of helium every second. The loss of mass is what creates energy and keeps Earth habitable.
This is a very simplified version of what happens. The physics and maths involves lots of squiggles, arrows and numbers which frankly go over my head. It doesn't stop it being fascinating though.
