Multicultural Lunch

5 years ago I never would have thought I'd be making Mexican food in Thailand. But here I am, taco salad in front of me, surrounded by Thai friends. For some of them, it was the first, others were looking forward to this meal all week. I was in the latter category. I love Thai food, but I also love Mexican food. It's not often that we get to eat it, so today was a very special day.

At the end of the meal, one friend said, "I'm full, but not full like when I eat rice." I actually was thinking the same thing. It's interesting how when we've become accustomed to one type of food, other food doesn't fill us up the same way.
