It’s time!

For the elderflower cordial….
I picked my first harvest today, the first batch is always the one with the least little beasties in them. As the season progresses more and more are attracted to the sweet smell and it becomes more difficult to keep them out of the cordial.
Here is the very simple recipe:
-Pick about 15 to 20 heads of lovely elderflowers on a dry day, just when they are ripened
-dissolve 1 kg of sugar in 750 ml of boiling water, keep boiling until all is dissolved
-cut up one large or two small lemons, including the rind and add, together with 20-25g of citric acid
-leave to steep for 24 hours, drain through a Muslim sieve and bottle up.
-keeps in the fridge for up to a year if it lasts that long!
