Coriander Chutney Chicken Strips

It's been a while.....

Last night we had chicken dipped in egg, then flour, then cilantro (coriander) leaves, then sauteed in olive oil. it was a bit boring.

We often eat organic chicken samosas that come with an oversized pouch of coriander chutney. I thought the chutney would be a way to make the dish more interesting, if used as a marinade. The husband gave me an eye roll worthy of the daughter....

Tonight the husband was at an awards dinner so I had a go at the "new and improved coriander chicken". Delicious as you can see, especially when served with a healthy fresh salad and (ahem!) microwave fries, LOLOL!
