Brunch

We caught the bus to Mission Bay this morning to meet friends and go for brunch.  Before walking up to their home, we stopped to look at the beach on a coldish, wettish morning. We all piled into their car and drove to Kind Cafe in a suburb called Morningside.  It’s a social enterprise aimed at making Morningside a better place in which to live, and is a (mostly) vegan cafe - our friends are vegan/vegetarian.  We had an enjoyable brunch and a lovely catch up following their four-week absence in their native Australia to spend time with family and attend the wedding of the younger of their two sons.

We bought a bucket of aubergines at the market yesterday, so after we returned home hubby sliced and roasted them to go in the freezer for future use. Meanwhile I made savoury crackers and ginger biscuits (sweetened only with golden raisins). Around mid-afternoon we collected Mum and set off to pick up the open home signs. Back home again I made some ricotta and then used it to make gnudi for supper.  It wasn’t too bad for a first attempt, but some refinement is required. Altogether an enjoyable, relaxing day.

The blip is looking across Mission Bay beach at low tide towards North Head and Mt Victoria, with the Tamaki Yacht Club glistening in the sunlight.
