Monumental pavlova!
Today my friends Fiona and Janice came for lunch.
In the olden days (pre-covid) we met up once a month at a local farm shop cafe, but between one thing and another, the last time the three of us managed to get together for lunch was last June so we were well overdue a catch up.
They insisted that if I was providing the savoury part of lunch (egg Mayo on cheddar and jalapeño sourdough bread and a selection of nibbles) then they would bring a treat to have with coffee afterwards. It’s a deal! :-))
I was expecting scones or perhaps a traybake but Fiona arrived carrying a massive white box, inside which was this glorious pavlova! The smell of fresh strawberries, raspberries and blueberries when I opened the lid was mouthwatering.
And so, over lunch we caught up on what had been happening over the last few months, and after a short pause between courses, I made a large pot of coffee and was given the task of cutting each of us a slice of pavlova. It was so grand it felt like cutting a wedding cake! :-))
OMG! I can tell you it tastes even better than it looks! Light as a feather, not overly creamy and loads of delicious sweet, ripe fruit. A taste explosion.
They refused to take any of it away so David has very helpfully had two massive slices (not all at once :-))
So lovely to finally catch up with them and we’ve put a date in the diary to meet up again next month. Fingers crossed nothing will thwart that get together!
