Victoria Sponge

#1 daughter experiments with gluten free cookery for me and usually produces some lovely baking.  The latest lot of her poppy seed muffins did not come up to par and only resulted in two mini Victoria Sponges, which were actually delicious but not what she had anticipated ....  

Gluten free cookery can often be like that!!!  I should know, I've been doing it long enough.
