Loaded cheesecake!!

Recently for my birthday, my mum bought me a cheesecake book, it teaches you the method then sets you loose!!

My friends birthday was in December right near Xmas as I had made her a Xmas cake I did an I.O.U on the birthday cake, as I’m seeing her tonight I’m surprising her with this.

The cheesecake has a shortbread base, topped with salted caramel truffles peeking through, baileys and white chocolate filling, loaded with white ganache, baileys truffles, salted caramel fudge, white chocolate Lindt and Bailey’s filled pipettes!

Hoping she loves it!!
