CHICORY
Wild Chicory (Cichorium intybus) is a common plant growing along roadsides everywhere in North America. A native to Europe, it was cultivated as a forage crop and sent all around the world where it has become endemic.

A.K.A. Blue Daisy, Blue Flower, Blue Dandelion, Cornflower, Horse Weed...and many others.

For those who haven't heard the story before, coffee was not plentiful during WWII (the armed forces got priority) so locals had to drink a substitute....for many it was Postum...made from wheat germ, molasses and other crud by the Post people....yup, the cereal people.

I was weaned on the stuff and love it to this day. Grandma liked a little more "bite" to it so she had us grandchildren out along the roadsides pulling chicory plants out by the roots. She'd chop, roast and add chicory root to her Postum to spice it up a little. Coffee substitute.
