Visited an award winning cheesemaker client of mine in Shropshire today. He's just moved into new premises and is happy to be making again. These colanders are packed with fresh curds - raw cheese that will mature into 'wheels' in a few weeks. I'm fascinated how such simple processes can create such wonderfully complex products.
