Lemon cheese!

Started making this after getting back from a boozy interval with a couple of friends at their house. We started with champagne and nibbles and then progressed to red wine with a selection of cold meats and salad, hot sausage rolls and M&S chicken scotch eggs. Followed by cheeses with port for those that could manage it. Not me! Followed by coffee and stollen! I had been expecting a quick drink and nibbles and only being there an hour. As it turned out it was five hours of joy!

On the way up I had been looking for castor sugar to make the lemon cheese but none was to be had so I had to make it with half castor sugar and half soft brown sugar! It is not too bad! It is for presents! I will make more tomorrow evening for the following day! Nothing like last minute mania!
