Project 365 day 351: Lebkuchen

J's PA, who is German, made lebkuchen with her children and brought some for us. They were delicious, with the traditional white rice paper on the underside, a beautifully textured and flavoured soft biscuit and a topping of rich, dark chocolate. She apologised for the chocolate layer being too thick; J and I thought it was perfect.
